Leftover Baked or Broiled Ham Recipes Hot Ham Casserole
1 T. butter 1/16 t. pepper
2 T. flour 1 cup milk
1/4 t. salt
Melt Butter. Add flour, salt, and pepper. Add milk slowly,
stirring constantly. Cook slowly to desired thickness (preferably
in double broiler).

Ham Quiche Lorraine
1 (9-inch) pie shell, unbaked 1 cup shredded swiss cheese
2 T. flour 1 1/4 c. cream or half and half
1/2 to 3/4 cup country ham, finely diced 1/2 t. salt
(Use scraps from baked ham or lightly 1/8 t. nutmeg
fry slices) 1/8 t. pepper
Brush pie shell with small amount of the beaten eggs. Prick bottom and
sides with fork. If using metal pie pan, bake shell in preheated 450
degree oven until golden brown (about 5 min.). If using pie plate, bake
shell at 425 degrees. Cool on wire rack. Reduce oven temperature to 375
degrees for metal pan or 350 for pie plate. Sprinkle country ham and
cheese in pie shell.
Beat remaining ingredients together until well blended. Pour into pie
shell. Bake in preheated oven until knife inserted halfway between corner
and outside edge comes out clean(35 to 40 minutes). Let stand 10
minutes before serving. Serves: 6
