Leftover Baked or Broiled Ham Recipes

Hot Ham Casserole

   2 cups baked or broiled country ham, diced     2t. lemon juice
   1 cup mayonnaise                               1 cup slivered almonds
   1 1/2 cup celery, diced                        1/2 cup shredded cheese
   1/2 t. accent                                  1 cup broken potato chips
   2 t. grated onions

   Mix first seven ingredients, pour into casserole and top with cheese and 
   potato chips.  Bake in 350 degree F. oven for 20 minutes.  This may also 
   be served cold.
Kentucky Country Ham Croquettes
2 T. butter                                  1/2 t. lemon juice
4 T. flour                                   2 Cups ground country ham
1 cup milk      
                             
Melt butter and blend with flour.  Stir milk in gradually. Cook until
thick.  Add ham and lemon juice. Cool thoroughly. Shape into croquettes
and roll in bread crumbs.  Dip in beaten egg.  Roll again in bread 
crumbs. Fry in deep fat. 
Cream Sauce for Croquettes
   1 T. butter                                        1/16 t. pepper
   2 T. flour                                         1 cup milk
   1/4 t. salt   
                                     
   Melt Butter.  Add flour, salt, and pepper.  Add milk slowly, 
   stirring constantly. Cook slowly to desired thickness (preferably 
   in double broiler).
Kentucky Country Ham Quiche Lorraine
   1 (9-inch) pie shell, unbaked             1 cup shredded swiss cheese
   2 T. flour                                1 1/4 c. cream or half and half
   1/2 to 3/4 cup country ham, finely diced   1/2 t. salt
     (Use scraps from baked ham or lightly    1/8 t. nutmeg
      fry slices)                             1/8 t. pepper

   Brush pie shell with small amount of the beaten eggs.  Prick bottom and 
   sides with fork.  If using metal pie pan, bake shell in preheated 450 
   degree oven until golden brown (about 5 min.).  If using pie plate, bake
   shell at 425 degrees. Cool on wire rack.  Reduce oven temperature to 375
   degrees for metal pan or 350 for pie plate.  Sprinkle country ham and 
   cheese in pie shell.  
   Beat remaining ingredients together until well blended.  Pour into pie
   shell. Bake in preheated oven until knife inserted halfway between corner
   and outside edge comes out clean(35 to 40 minutes).  Let stand 10 
   minutes before serving.  Serves: 6
